- 4 boneless, skinless chicken breasts
- 1 onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 tsp dried thyme
- Salt & pepper to taste
- 1 cup frozen peas and carrots
- 1 can refrigerated biscuit dough (cut into 1-inch pieces)
- Place chicken, onion, garlic, broth, soup, and thyme in the slow cooker.
- Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
- Shred the chicken directly in the pot using two forks.
- Stir in peas and carrots, then drop in biscuit dough pieces on top.
- Cover and cook on HIGH for an additional 1 hour until dumplings are fluffy and cooked through.
