🍪 Chewy Paleo Tahini Cookies with Dark Chocolate Chunks & Sea Salt
These paleo tahini cookies are melt-in-your-mouth good. Loaded with dark chocolate chunks and rich nutty tahini, they’re naturally gluten-free, dairy-free, and sweetened with coconut sugar. Perfectly chewy in the center with crisp edges and a sprinkle of sea salt, they’re so good, you’ll want to bake a second batch right away!
📋 Ingredients:
- 1/2 cup tahini (well-stirred)
- 1/2 cup coconut sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup almond flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chunks
- Flaky sea salt for topping (optional)
📝 Instructions:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together tahini, coconut sugar, egg, and vanilla until smooth.
- Stir in almond flour, baking soda, and salt. Fold in chocolate chunks.
- Scoop 1.5 tbsp of dough onto the baking sheet. Flatten slightly with a fork or hand.
- Sprinkle with sea salt (if using). Bake for 9–11 minutes or until edges are golden.
- Cool on the pan for 10 mins before transferring to a rack. Enjoy warm or store in an airtight container.
